Breasts from 2-3 snow
geese
Italian salad dressing
Cajun seasoning
Green peppers
Onions
Bacon
Toothpicks
Breast out 2-3 snow geese.
Slice each breast horizionally.
Place the breasts in a bowl or plactic container.
Cover the meat with any brand of Italian salad dressing.
Place in refrigerator overnight to marinate.
Remove container from
refrigerator.
Pour off marinate and save.
Sprinkle each breast with Cajun seasoning.
Each breast preparation:
Place cut strips of green peppers on both sides of breast.
Cover each side of the breast with half of a leaf from a large
onion cut in half. This forms a "cup" to hold the
peppers.
Then, wrap each breast with 3 slices of bacon. Put a toothpick
fully through the end of each bacon strip into the breast.
Cook breasts on a barbeque
until meat is medium rare.
Baste each breast several times with the saved marinate.
Serve 2 breasts for each
person with favorite vegetables.
Red wine compliments the meal.
