HONEY-GARLIC GOOSE SAUSAGE RECIPIE

 

Shoot a limit of geese.
Breast out the geese and trim the thighs.
Grind the wild meat once (15 lbs).
Add equal amount of LEAN ground pork trim which has been ground twice (15 lbs).

Add:
picking salt (1/4 lb/30 lbs)
pepper to taste
binder (powdered milk and water)
seasoning salt
2-4 cloves of garlic/30 lbs
1 cup brown sugar

Encase and smoke-cure preferably with Alder or Mesquite

Best served as a broiled appetizer accompanied with mustard or barbecue sauce.
A great entree if cooked on the barbecue over indirect heat.
Can also be a great addition to Jambalaya.
