Braised Chicken in Five Spice Brown Sauce by Amy Rabb-Liu 1 chicken 10 C Water (or a bit more if your chicken is large) 1 C soy sauce 1/2 C wine 4 oz rock sugar 1 5-spice pack sesame oil to brush on braised chicken cilantro for garnishing braised chicken Make sauce by boiling water, soy sauce, wine, sugar, 5-spice pack for 30 minutes. Then add whole chicken, return to boil. Simmer 20 minutes, turn chicken and simmer another 20 minutes (increase these times a bit for chicken over 6 lbs). Let soak in cooking liquid. When cool, store in a large ziplock bag with a bit of liquid. Refrigerate. Cut and arrange; brush with sesame oil. Garnish with cilantro.
